Easy Paleo Pancakes

1 ½ large ripe bananas
2 eggs, whisked
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1/8 teaspoon baking soda
Maple syrup (optional)
Fresh fruits (optional)


1. In a bowl, lightly mash the bananas with a potato masher or a fork. 
2. Add the whisked egg, baking soda, vanilla, and cinnamon. Stir until well combined.
3. Pour about 2 tablespoons of the batter onto a skillet over medium-low heat and cook until the bottom appears set (about 1 to 2 minutes). Flip with a spatula and cook for another minute.
4. Serve immediately.
5. Top with fresh fruits and maple syrup (optional).
