1 ½ pounds (750 grams) pork leg steaks, diced
2 heads of broccoli, chopped
½ pineapple, peeled and diced
½ small pumpkin, diced
1 ½ red peppers, sliced and deseeded
3 zucchinis, sliced
3 carrots, washed and chopped
Juice of 2 lemons
1 tablespoon coconut oil
Cracked black pepper, to taste
2 cloves garlic, crushed
¼ cup freshly squeezed orange juice
1. Put the pumpkin and a small amount of water in a microwave-safe bowl. Put it in the microwave and cook it on HIGH for 5 minutes. Drain the water (if any) and set aside.
2. Heat the oil in a pan and cook the pork on a medium heat until slightly brown.
3. Add the garlic, pumpkin, carrots and lemon juice. Put the lid on and let the vegetables cook for a few minutes.
4. Add the zucchinis, pepper, pineapple, broccoli and fresh orange juice. Put the lid back on and let the vegetables cook for about 5 more minutes.
5. Serve hot.
